CREAMY GARLIC MASHED CAULIFLOWER

INGREDIENTS:

1 head cauliflower (cut into florets)

3 Tbsp unsalted butter

3 Tbsp sour cream

4 cloves garlic (halved)

1/4 c parmesan cheese

Sea salt & cracked pepper


DIRECTIONS:

Place cauliflower in steamer basket in boiling water. Steam for 20 minutes or until tender. Remove. Drain. Place in bowl & set aside


In a pot, melt butter on medium heat; Add garlic to the melted butter and sautee for a couple minutes. Add the melted garlic butter to the cauliflower bowl.


Blend the cauliflower and garlic butter into a food processor until smooth. You may have to do in a few batches. Once all blended, add back to pot and stir in parmesan cheese, sour cream, sea salt and cracked pepper.
